Sometimes I go on a baking frenzy where all I want to do is bake and cook one thing after the next.
This weekend was definitely that. First, I made
A Pumpkin Roll
This was definitely one of those recipes that turned out looking nothing like it was supposed to, but it still tasted yummy! Kill the blob!
Saturday afternoon I tried Enchiladas in a crock pot.
I really didn't think it would work, but it did and they were super good.
I made strawberry freezer jam (not pictured, sorry) and
Peanut Butter, Chocolate Chip Granola Bars on Saturday too. Joe really likes taking the homemade granola bars with him to school for snacks (pictured in the ziploc below). Sunday afternoon, Joe and I tagteamed a new calzone idea I had.
We made Chicken, Cheesy, & Broccoli filled Calzones!
Joe made some alfredo sauce to dip the calzones in and they were so scrumptious!
We made enough for about 5 meals and froze the extras for a later date. We love making lots of extras whenever we have time to make something really good!
Then, I made some Pumpkin Bread (with chocolate chips for Joe) with the left over pumpkin from the pumkin roll.
I also did some Crock Pot Chicken this weekend. Now, this has been an excellent idea that I've been doing the past few months. On the weekend, I crock pot 4-6 breasts of chicken in water, bay leaves, and whatever spices desired. Then I shread all the chicken and put it in tupperware in the fridge. Throughout the week we add it to tacos, salads, chilis, sandwiches, soups, rice or WHATEVER really! It's so handy to have already cooked, moist and yummy shredded chicken to cut down on preparation time during the week.
Last, but not least, I made a Cocoanut, Banana Cream Pie. This is a repeat from last weekend. I made it for Sunday dinner dessert and it was so good, I had to make it again.
(I just couldn't waste the extra half and half from last week's pie.)
When I was in college, my High Councilmen's wife gave all the girls in our ward a Gourmet Pie Recipe Collection. At the time, I thought I would never use it, but I've made a couple of pies out of it now and they always turn out so scrumptious!
First I baked a pie crust (store bought... not interested in making that part from scratch). After it was cooled, I layered banannas in the bottom. Then, I mixed the cream portion over the stove and filled in the crust. Topped off with whip cream and a few more sliced banannas, this pie is so delicious!
If anybody would like the recipes to anything that I made this weekend, I would be happy to send them to you. I thought about putting links on here for everything I made, but I'm not going to put in that kind of time unless asked. :)

Those all sound so yummy! I've thought about doing that with chicken, but just haven't. Also, try your calzones with creamy pesto, chicken, artichokes, and lots of cheese. Sooooo yummy!

Wow! I absolutely love baking. It's the best. Some of that stuff sounds delicious! This is a far cry from your cooking at Heritage Halls!
I do have to say, there is far too little chocolate in all that baking, though. At least for me. ;-)
we are SO different in this way ha ha. I have NEVER felt the need to bake so much! I will bake cookies and cake on birthdays and thats pretty much it. I have no clue how to make pies, rolls, deserts, bread of any kind really? I'm proud of you for learning how to cook! I'm still trying to gain the motivation ha ha ha
I share you passion with a big day of cooking/baking! Love it! I am very interested in the calzones. Is that whole wheat flour, or did they just bake up that color? Will you share the recipe for them and the alfredo dip with me? I think I'm in the mood to follow your example!
